Recipe for vegan pasta with spinach

Ingredients: 

  • 400g of fresh spinach
  • 1 can of coconut milk
  • 1 onion
  • 2 cloves of garlic
  • Salt / pepper 
  • Vegetable oil
  • Your favourite types of pasta. Here penne.
Method of preparing:
Peel the onions and cut them finely, squeeze the garlic through a press and fry it with oil in a pan. Add the spinach, salt, pepper and cook until the spinach is tender. Then add coconut milk and bring it to a boil again. Blend half of the sauce with a hand blender, leaving some of the larger pieces of spinach. Serve warm. To add nutritional value, sprinkle a spoonful of inactive yeast flakes on the dish.
