Vegan and gluten-free banana bread with walnuts

Ingredients: (baking tray 25 /35cm)

  • 4.5 cups gluten-free flour
  • 3/4 cup of vegetable oil
  • 3/4 cup of brown sugar
  • 3/4 cup of plant-based milk
  • 6 ripe bananas
  • 2 teaspoons of baking soda
  • A large pinch of salt
  • 1 cup of walnuts (preferably soaked 8 hours earlier)

Preheat the oven to 180 degrees. Line a baking tray with baking paper.
In one bowl, combine the flour, baking soda and salt, and in the other, combine the oil and sugar. Crush the bananas thoroughly with a fork or a blender until smooth, then add them to the liquid ingredients together with the milk and mix or blend thoroughly. Combine dry and wet ingredients and mix with a spoon until combined. Finally, add the nuts and mix again briefly.
Put the dough on a baking tray and bake for about 45-50 minutes.
